Combination of gum Arabic-gelatin complex coacervation with gelatin-xanthan gum complex gelation for the preparation of algal oil powders

Complex coacervation of oppositely charged polymers is an important method to encapsulate oils and to prepare oil powders. Complex gelation has been applied to prepare oppositely charged polymer hydrogels. Herein, a combination method of gum Arabic (GA)-gelatin complex coacervation with gelatin-xanthan gum (XG) complex gelation was developed to prepare four types of algal oil powders with two kinds of gelatins (Type A gelatin: AG; Type B gelatin: BG): Algal oil@GA-AG, algal oil@GA-BG, algal oil@GA-AG-XG, and algal oil@GA-BG-XG powders. XG addition increased the sizes of the complex coacervates and oil powders. AG induced larger sizes of the complex coacervates and oil powders than BG. XG addition increased the algal oil oxidation, and AG induced higher algal oil oxidation than BG. AG induced lower free fatty acid (FFA) released percentages (e.g., 120 min: 80.2% vs. 87.9% for algal oil@GA-gelatin powders; 78.9% vs. 81.7% for algal oil@GA-gelatin-XG powders) than BG.
