The Middle Test Study of Making Pickles by Fermentation Utilizing Green Function Strains——Study report on selection and application of fine lactate strains

The lactate strains were separated from pickles and fermentation milk by eight separation media,and the strains were selected by seven selection media, in the end,six series lactate strains were attained and their producing lactate potential all reached lg/100ml.and 58 strains of them produced lots of lactate By fermetation and 27 strains of them were excellent testing their comprehensive index.
