This article reviews the emerging data on environmental risk factors for eosinophilic oesophagitis (EoE), whose understanding stems from the hygiene hypothesis model where disease development is mediated through dysbiosis. The authors describe early childhood exposure to infectious agents, antibiotic use, acid suppression and caesarean delivery to be amongst the risk factors for EoE, while infections with organisms such as Helicobacter pylori appear to be inversely related with the disease. Behavioural and geographic risk factors such as population density, climate zone and seasonality are also described.
