Comparative analysis of muscle nutritional composition in two indigenous fish species from Fuxian lake

The experiment aimed to evaluate the nutritional characteristics of two indigenous fish species in Fuxian lake. Selecting wild Anabarilius grahami , farmed Anabarilius grahami , and wild Acrossocheilus yunnanensis as research objects, the conventional nutritional composition, amino acid composition, fatty acid composition, and mineral element content of their back muscles were analyzed. The results showed that the crude protein content of the muscle was ranked as follows: Wild Anabarilius grahami > wild Acrossocheilus yunnanensis > farmed Anabarilius grahami . A total of 17 amino acids were detected in the three types of fish, including 10 non essential amino acids, seven essential amino acids, and six flavor amino acids. The three types of fish had the highest content of glutamic acid, accounting for 14.85%, 14.17%, and 15.62% of the total amino acid content, respectively. A total of 18 types of fatty acids were detected in the muscles of wild Anabarilius grahami , including five saturated fatty acids, five monounsaturated fatty acids, and eight polyunsaturated fatty acids. A total of 22 types of fatty acids were detected in farmed Anabarilius grahami , including seven saturated fatty acids, six monounsaturated fatty acids, and nine polyunsaturated fatty acids.
