Analysis and evaluation of muscle nutritional components of two rare endemic fish species in Fuxian Lake

The experiment aimed to investigate the muscle nutritional components of Percocypris pingi and Spinibarbus yunnanensis in Fuxian Lake. The conventional nutrients, amino acid composition, fatty acid composition, and mineral element concentrations in the muscle of these two wild endemic fish species were determined. The results showed that the concentrations of moisture, crude protein, crude fat, and crude ash in the muscle of Percocypris pingi were 78.30%, 19.10%, 1.17%, and 0.54%, respectively. Those in the muscle of Spinibarbus yunnanensis were 77.93%, 18.77%, 1.27%, and 0.55%, respectively. A total of 17 amino acids were detected in the muscle of both Percocypris pingi and Spinibarbus yunnanensis . The concentrations of total amino acids were 16.52% and 15.86%, the concentrations of essential amino acids were 6.92% and 6.67%, and the essential amino acids index (EAAI) were 80.01 and 79.09, respectively. The total essential amino acids in both species exceeded the Food and Agriculture Organization/World Health Organization (FAO/WHO) pattern, with methionine + cystine being the first limiting amino acid. A total of 13 fatty acids were detected in the muscle of Percocypris pingi , including nine unsaturated fatty acids, which accounted for 70.73% of the total fatty acids, with oleic acid and docosahexaenoic acid being the predominant ones.
