In ther light of Peixian Hundefleisch,specialty of Peixian County,this paper builds a comprehensive evaluation index system of Peixian Hundefleisch by means of Interpretative Structural Modeling(SIM),and determines the weight of each index with Analytic Hierarchy Process(AHP),makes the analysis on some main indexes of Peixian Hundefleisch such as the brand value,popularity,taste,economical efficiency,and market competitiveness,etc.
